Goal
I had three bananas about to go off and it was grocery day so I had brought a new bunch. I wanted to make a snack for the week using these, so naturally I made protein blueberry banana muffins.
Process
Blitzed the bananas, blueberries, honey and oats granola, protein powder, pinch of salt, 0% Greek yogurt until chunky. Poured into muffin tin, baked at 350Funtil done.
The more seasoned baker would notice “There’s no fat”. And you’re absolutely right. I completely forgot to spray the muffin tin down with some oil.
I also forgot to add egg.

Observations
Obviously, without any kind of fat in this mixture they stuck…hard. I lost about the bottom third of these muffins for my transgression.
Without egg, the overall mixture is a bit crumbly but they still hold together. I’d actually consider this nearly proper muffin texture; soft, slightly crumbly. During baking they did dome nicely, but deflated slightly after cooling.

Future Direction
A bit of lemon zest might have been nice here for some brightness to cut through the yogurt tang and the banana/blueberry sweetness. Could also use citric acid in the mix.
Silicone muffin tray is already ordered to prevent this kind of issue, hopefully. If the oil is only providing lubrication, it’s not really worth the calories when silicone should do the trick.
Blitz the fruit component, fold in the yogurt and granola components. This should give a more varied texture and could also improve consistency.
