Protein Snack Muffins #2

Goal

Improve on last week’s banana-blueberry protein muffins.

Observations

This week I ordered a set of silicone muffin trays. With a light spray of olive oil there was zero sticking, cleanup was simple, and the muffins were removed perfectly.

The addition of the egg in the recipe definitely improved the overall texture and stability. The egg also definitely offset the drying of the protein powder.

What I’d improve

I went with two eggs for this batch, next time I think I would go with less.

I should also have added some Greek yogurt for some tang and slightly improved macros. This would necessitate the removal of one egg, probably. With the Greek yogurt I could probably add more protein powder as well and still retain a moist cake.

Could also use a bit of lift, maybe I’ll sprinkle in some lemon zest next batch.
