Cheesesteak Bun

Goal

Design a meal-prep cheesesteak bun using the hand pie architecture while keeping the spirit of the cheesesteak.

Recipe

Shredded beef chuck roast
Shredded sharp, white cheddar
Caramelized onions
Raw shallots
Shredded cabbage

70% Beef, 20% cheese, 7% onion+shallot, 3% cabbage

80g dough and about 67g filling results in about 360 calories.

Observations

Shredded chuck was perfect for this application. Ground beef would save calories but would have lost the spirit of the inspiration.

Cheese remained whole after mixing with room temp filling. The strands melted and helped glue the beef strands together.

Using type70 flour for the bun dough, instead of AP, resulted in a slightly airier and more tasty dough.

Egg white wash is not adequate for getting a nice brown, Amoroso-style, coloring.

Filling flavor improves overnight. Day 1 is great, Day 2 is wonderful.

Future Direction

Might try 15% cheese to increase volume of caramelized and raw onion flavor.

Might try cubing the cheese instead to get more pronounced cheese sections, though this would be a marginal gain.
